Rafael Rubio is the founder of Rubio’s restaurant, a highly successful Mexican food chain. Since its founding in 1983, he has grown the company to over 100 locations. He took the company public in 1999, retiring as chairman of the board. From 2000 to 2003 he was co-owner of the San Diego Grand Prix, working with business leaders and the City Council to establish a permanent automobile race facility in San Diego. In 2000 Mr. Rubio co-founded Incablock, LLC U.S. and Incablock de Mexico, S.A. The company owns proprietary technology in interlocking block construction. He is currently working with the Mexican government to build low income housing in Mexico. Mr. Rubio was born and raised in Mexico and immigrated to the U.S. as an adult. He holds dual citizenship with the U.S. and Mexico.
